- ¼ cup Parmesan cheese, grated
- ¼ cup Almond flour or coconut flour
- ½ tsp Dried oregano
- ½ tsp Garlic powder
- 2 Eggs
For the Pizza Toppings

- ½ lb Ground chicken, turkey, lean beef
- ½ cup Bell peppers, sliced
- ½ cup Red onion, sliced
- ½ cup Mushrooms, sliced
- ½ cup Mozzarella cheese, shredded
- ½ cup Pepperoncini, sliced (optional)
- ¼ cup Black olives, sliced (optional)
- Fresh basil for garnish (optional)
INSTRUCTIONS
For the Cauliflower Crust
- Preheat your oven to 425°F (220°C). Line a baking sheet or pizza stone with parchment paper.
- Rice the cauliflower by pulsing it in a food processor until it resembles rice grains. You can also use a grater.
- Place the riced cauliflower in a microwave-safe bowl and microwave for about 4-5 minutes. Allow it to cool slightly.
- Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to getting a crispy crust.
- In a large mixing bowl, combine the cauliflower, shredded mozzarella, grated Parmesan, almond or coconut flour, dried oregano, garlic powder, eggs, salt, and pepper. Mix until a dough forms.
For Assembling the Pizza
- Press the cauliflower dough onto the parchment-lined baking sheet or pizza stone, forming a pizza crust of your desired thickness. Make sure to press it evenly to avoid any thin spots.
- Pre-bake the cauliflower crust in the preheated oven for about 15-20 minutes or until it turns golden brown.
- Remove the crust from the oven and spread the tomato or pizza sauce evenly over it.
- Cook ground chicken (turkey or lean beef) in a medium skillet until fully cooked.
- Add the ground chicken, sliced bell peppers, sliced pepperoncini, red onion, mushrooms, and mozzarella cheese on top of the sauce.
- If you like, sprinkle sliced black olives on the pizza.
- Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil leaves, if desired.
