INGREDIENTS
  

For the Cauliflower Crust

  • 1 Head of cauliflower, riced (yields 2-3 cups)
  • 1 cup Mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • ¼ cup Almond flour or coconut flour
  • ½ tsp Dried oregano
  • ½ tsp Garlic powder
  • 2 Eggs

For the Pizza Toppings

  • ½ cup Tomato sauce or pizza sauce
  • ½ lb Ground chicken, turkey, lean beef
  • ½ cup Bell peppers, sliced
  • ½ cup Red onion, sliced
  • ½ cup Mushrooms, sliced
  • ½ cup Mozzarella cheese, shredded
  • ½ cup Pepperoncini, sliced (optional)
  • ¼ cup Black olives, sliced (optional)
  • Fresh basil for garnish (optional)

INSTRUCTIONS
 

For the Cauliflower Crust

  • Preheat your oven to 425°F (220°C). Line a baking sheet or pizza stone with parchment paper.
  • Rice the cauliflower by pulsing it in a food processor until it resembles rice grains. You can also use a grater.
  • Place the riced cauliflower in a microwave-safe bowl and microwave for about 4-5 minutes. Allow it to cool slightly.
  • Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to getting a crispy crust.
  • In a large mixing bowl, combine the cauliflower, shredded mozzarella, grated Parmesan, almond or coconut flour, dried oregano, garlic powder, eggs, salt, and pepper. Mix until a dough forms.

For Assembling the Pizza

  • Press the cauliflower dough onto the parchment-lined baking sheet or pizza stone, forming a pizza crust of your desired thickness. Make sure to press it evenly to avoid any thin spots.
  • Pre-bake the cauliflower crust in the preheated oven for about 15-20 minutes or until it turns golden brown.
  • Remove the crust from the oven and spread the tomato or pizza sauce evenly over it.
  • Cook ground chicken (turkey or lean beef) in a medium skillet until fully cooked.
  • Add the ground chicken, sliced bell peppers, sliced pepperoncini, red onion, mushrooms, and mozzarella cheese on top of the sauce.
  • If you like, sprinkle sliced black olives on the pizza.
  • Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh basil leaves, if desired.
