Spinach Mozzarella Meatloaf
INGREDIENTS
- 2 Pounds 95% lean ground beef
- 2½ Ounces Chopped fresh Spinach
- 2 Cups bread crumbs
- 2 Cups Shredded Mozzarella
- ½ Yellow Onion, Chopped
- 3 Garlic Cloves, Minced
- 3 Large Eggs
- 1 tsp Salt
- Fresh Ground Pepper to taste
INSTRUCTIONS
- Prepare all chopped ingredients.
- Combine all ingredients in a large bowl and mix with hands until well combined.
- Spray Meatloaf Pan with non-stick spray, then add Mixture to pan.
- Bake Meatloaf in the oven at 350℉ for 60-75 minutes.
- Optional: Top with melted cheese and parsley
NOTES
Substitute Ground Turkey or Ground Chicken for a leaner protein option.
If you are preparing this ahead of time for the week, you can freeze the uncooked mixture in the pan. Thaw the mixture and then follow above cook time. Cooked Meatloaf can also be cooled to room temperature then frozen and eaten at a later time.
