Slow Cooker Pork Chops with Veggies & Rice

INGREDIENTS
  

  • 4 boneless pork chops
  • 2 large sweet potatoes, diced
  • 2 cups snipped green beans
  • 1 cup uncooked rice
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • ½ cup pepperoncini juice (or chicken broth)
  • ½ tsp paprika
  • salt & pepper to taste

INSTRUCTIONS
 

  • Season the pork chops with salt, pepper, and paprika.
  • In a large skillet over medium heat, add a tablespoon of oil and sear the pork chops on both sides until browned, about 2-3 minutes per side. Remove from the skillet and set aside.
  • In the same skillet, add the chopped onion and minced garlic and cook for about 2-3 minutes or until the onion is softened.
  • In a 6-quart slow cooker, add the diced sweet potatoes, snipped green beans, and uncooked rice.
  • Pour the onion and chicken broth mixture over the vegetables.
  • Place the pork chops on top of the vegetables.
  • Cover and cook on high for 3-4 hours or on low for 6-8 hours, or until the pork is cooked through and the sweet potatoes are tender.
  • Serve hot and enjoy!

    I loved this recipe but veggies and rice turned to mush. The pork chops were very tender. I will cook again but leave vegetables out until closer to the end and cook rice separately.
