Shredded Pork Tostada
Perfect recipe for repurposing leftover chicken, pork, or beef!
INGREDIENTS
- 3 cups Shredded chicken, pork or beef
- 6 Tostada shells
- ¾ cup Refried beans
- 1 cup Lettuce, shredded
- 1 cup Tomatoes, diced
- ¾ cup Shredded cheese, Mexican blend
- 1-2 Avocados, sliced (optional)
- Fresh cilantro (optional)
- Lime wedges (optional)
- Light sour cream or Greek yogurt (optional)
- Jalapeños (optional)
- Salsa (optional)
INSTRUCTIONS
- Preheat your oven to 375°F.
- In a small saucepan, heat the refried beans over medium-low heat until they are warmed through.
- Assemble the tostadas: Spread a layer of warmed refried beans on each tostada shell. Add a generous amount of shredded chicken, pork or beef on top of the beans.
- Sprinkle shredded cheese on each tostada.
- Place the prepared tostadas back into the oven for 5-7 minutes or until the cheese has melted.
- Remove from the oven and let them cool slightly.
- Sprinkle shredded lettuce, diced tomatoes, and sliced avocado over the chicken, pork or beef.
- If you like a bit of heat, add sliced jalapenos on top.
- Top each tostada with a dollop of sour cream and garnish with fresh cilantro.
- Serve with lime wedges on the side for an extra burst of flavor.
