Rustic Chicken Primavera Pasta

Rustic Chicken Primavera Pasta

INGREDIENTS
  

  • 4 oz Protein pasta
  • 2 Chicken breasts, bite sized pieces
  • 2 cups Cherry tomatoes, halved
  • 1 Medium Zucchini, chopped or spiraled
  • 1 Garlic clove, minced
  • ½ cup Fresh basil, chopped
  • 1 Tbsp Olive oil
  • Salt & Pepper

Optional

  • Chili flakes
  • Grated Parmesan cheese

INSTRUCTIONS
 

  • Season the chicken pieces with salt and pepper.
  • Heat half of the olive oil in a large skillet over medium-high heat. Add the chicken and sauté until fully cooked and golden brown, about 5-7 minutes. Remove from the skillet and set aside.
  • While the chicken is cooking, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  • In the same skillet used for chicken, add the remaining olive oil. Sauté the minced garlic for about 1 minute until fragrant. Add the halved cherry tomatoes and cook for 3-4 minutes until they start to soften and release their juices. Add the spiralized (or chopped) zucchini and cook for an additional 2-3 minutes until just tender.
  • Add the cooked pasta and chicken to the skillet with the vegetables. Toss everything together, adding a splash of reserved pasta water if needed to help combine and create a light sauce.
  • Season with additional salt, pepper, and chili flakes (if using). Stir in the fresh basil.
