Rustic Chicken Primavera Pasta
INGREDIENTS
- 4 oz Protein pasta
- 2 Chicken breasts, bite sized pieces
- 2 cups Cherry tomatoes, halved
- 1 Medium Zucchini, chopped or spiraled
- 1 Garlic clove, minced
- ½ cup Fresh basil, chopped
- 1 Tbsp Olive oil
- Salt & Pepper

- Grated Parmesan cheese
INSTRUCTIONS
- Season the chicken pieces with salt and pepper.
- Heat half of the olive oil in a large skillet over medium-high heat. Add the chicken and sauté until fully cooked and golden brown, about 5-7 minutes. Remove from the skillet and set aside.
- While the chicken is cooking, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- In the same skillet used for chicken, add the remaining olive oil. Sauté the minced garlic for about 1 minute until fragrant. Add the halved cherry tomatoes and cook for 3-4 minutes until they start to soften and release their juices. Add the spiralized (or chopped) zucchini and cook for an additional 2-3 minutes until just tender.
- Add the cooked pasta and chicken to the skillet with the vegetables. Toss everything together, adding a splash of reserved pasta water if needed to help combine and create a light sauce.
- Season with additional salt, pepper, and chili flakes (if using). Stir in the fresh basil.
