Protein Carrot Cake
INGREDIENTS
For the Cake:
- 2 cups Grated carrots
- 1 cup Oat flour
- 1 cup Almond flour
- ½ cup Vanilla protein powder
- ½ cup Unsweet applesauce
- ¼ cup Greek yogurt
- ¼ cup Honey (or maple syrup)
- 2 Eggs
- 1 tsp Vanilla extract
- 1 tsp Baking powder
- 1 tsp Baking soda
- 1 tsp Ground cinnamon
- ½ tsp Ground nutmeg
- ¼ tsp Salt
- ½ cup Chopped walnuts or pecans (optional)
For the Frosting:
- 8 oz Low-fat cream cheese, softened
- ¼ cup Greek yogurt
- 2 Tbsp Honey or maple syrup
- 1 tsp Vanilla extract
INSTRUCTIONS
- Preheat your oven to 350°F (175°C). Grease and flour a 9x9 inch baking pan or line it with parchment paper.
- In a large mixing bowl, combine the grated carrots, oat flour, almond flour, protein powder, applesauce, Greek yogurt, honey or maple syrup, eggs, and vanilla extract. Mix well until all ingredients are fully incorporated.
- Add the baking powder, baking soda, cinnamon, nutmeg, and salt to the bowl. Stir until the spices are evenly distributed throughout the batter.
- If using, fold in the chopped walnuts or pecans until they are evenly distributed in the batter.
- Pour the batter into the prepared baking pan and spread it out evenly with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- While the cake is baking, prepare the cream cheese frosting. In a medium mixing bowl, beat together the softened cream cheese, Greek yogurt, honey or maple syrup, and vanilla extract until smooth and creamy.
- Once the cake is done baking, remove it from the oven and let it cool completely in the pan.
- Once the cake has cooled, spread the cream cheese frosting evenly over the top of the cake.
