Maple Glazed Pork Chops with Roasted Apples & Sweet Potatoes

INGREDIENTS
  

  • 4 Bone-in pork chops
  • 3 Tbsp Maple syrup, sugar free
  • 2 Tbsp Dijon mustard
  • 2 Sweet potatoes, medium
  • 2 Apples, cored and sliced
  • 2 Tbsp Olive oil
  • 2 Tbsp Butter
  • 1 tsp Cinnamon
  • ½ tsp Nutmeg

INSTRUCTIONS
 

  • Preheat your oven to 375°F
  • Season the pork chops with salt and pepper. In a bowl, mix together the maple syrup and Dijon mustard. Brush the mixture over the pork chops and set aside.
  • Toss the sweet potato cubes and apple slices with olive oil, cinnamon, and nutmeg. Spread them on a baking sheet and roast for about 20-25 minutes or until they are tender and slightly caramelized
  • In a skillet over medium-high heat, add the butter. Once the butter has melted, add the pork chops and cook for about 4-5 minutes on each side or until they reach an internal temperature of 145°F.
    ** These can also be grilled, if preferred **
  • Serve the pork chops alongside the roasted apples and sweet potatoes. Drizzle any remaining glaze from the pan over the pork chops
