Homemade Macaroni & Cheese
INGREDIENTS
- 2 cups Elbow macaroni
- 2 cups Shredded sharp cheddar cheese
- ½ cup Grated Parmesan cheese
- 3 cups Milk
- ¼ cup Butter
- 2½ Tbsp All-purpose flour
- ½ tsp Salt
- ½ tsp Black pepper
- ½ tsp Paprika (optional)
- ½ cup Breadcrumbs (optional)
- Chopped parsley for garnish
INSTRUCTIONS
- Preheat your oven** to 350°F (175°C).
- In a large pot of boiling salted water, cook macaroni according to the package instructions until just al dente. Drain well.
- While the pasta cooks, melt butter in a saucepan over medium heat. Stir in the flour, salt, pepper, and paprika, mixing until smooth. Slowly pour in the milk, whisking constantly until the mixture is smooth and starts to thicken.
- Lower the heat and add 1 1/2 cups of the cheddar cheese and all of the Parmesan cheese. Stir until the cheese is melted and the sauce is smooth.
- Transfer the drained macaroni to a large mixing bowl. Pour the cheese sauce over the macaroni, stirring to combine. Taste and adjust seasoning if necessary.
- Pour the macaroni mixture into a greased 9x13 inch baking dish. Sprinkle the remaining 1/2 cup of cheddar cheese and breadcrumbs over the top.
