Homemade Cinnamon Rolls

INGREDIENTS
  

Dough Ingredients

  • 1 cup Warm milk (about 115℉)
  • tsp Instant yeast
  • 2 Large eggs (room temp)
  • 6 Tbsp Salted butter, softened
  • ½ cup Sugar
  • 1 tsp Salt
  • 4-4.5 cups Bread flour

Filling Ingredients

  • ½ cup Salted butter, softened
  • 1 cup Packed brown sugar
  • 2 Tbsp Cinnamon
  • ½ cup Heavy cream (poured over rolls before baking)

Frosting

  • 8 oz Cream cheese, softened
  • 6 Tbsp Salted butter
  • cups Powdered sugar
  • 4 tsp Vanilla Extract (OR maple extract)

INSTRUCTIONS
 

  • Activate the yeast. Warm the milk, sprinkle the yeast on top, and let it sit 3–5 minutes until it looks foamy and activated.
  • Make the dough. Mix in the eggs, soft butter, sugar, and salt. Add flour slowly (start with 4 cups) and knead until the dough is smooth, soft, and slightly tacky.
  • Let it rise. Place dough in a greased bowl, cover, and let it double — usually around 30 minutes in a warm spot.
  • Make the filling. Combine the softened butter, brown sugar, and cinnamon into a thick, spreadable paste.
  • Roll it out. Roll the dough into a large rectangle on a lightly floured surface.
  • Fill & Roll. Spread the cinnamon mixture evenly over the dough.Starting with the long side, roll it up tightly.
  • Slice the rolls. Cut into 12 equal rolls. Place in a greased 9×13 dish and let them rise again for about 20 minutes while the oven preheats (to 350℉)
  • The heavy cream trick. Warm the heavy cream slightly and pour it over the rolls before baking — this keeps them ultra soft and gooey.
  • Bake at 350°F for about 25 minutes, covering with foil if they begin to brown too quickly.
  • Mix the cream cheese, butter, powdered sugar, and your flavor of choice until smooth. Frost the warm rolls so it melts into all the swirls. 

NOTES

Want these ready with zero effort on Christmas morning?
  1. Prepare the rolls completely through slicing and placing them in the baking dish.
  2. Skip the second rise — cover tightly with plastic wrap + foil.
  3. Refrigerate overnight.
  4. In the morning, set them out to warm up and rise for 60–90 minutes until puffy.
  5. Warm the heavy cream and pour over the rolls.
  6. Bake at 350°F as usual.
  7. Frost while warm and enjoy the BEST Christmas morning smell ever.
