Hawaiian Honey Shrimp Skewers
INGREDIENTS
- 1 lb Large shrimp, peeled and deveined
- 1 Fresh pineapple chunks
- 1 Red bell pepper, diced
- 1 Red onion, diced
- 1 Tbsp Olive oil
- Salt & pepper
Spicy Honey Glaze
- ¼ cup Honey
- 2 Tbsp Soy sauce
- 1 Tbsp Sriracha sauce
- 1 Tbsp Fresh lime juice
- 2 Cloves garlic, minced
- 1 tsp Fresh ginger, grated
INSTRUCTIONS
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Thread the shrimp, pineapple chunks, red bell pepper, and red onion onto the skewers.
- In a small bowl, whisk together the honey, soy sauce, sriracha sauce, lime juice, minced garlic, and grated ginger until well combined.
- Preheat your grill to medium-high heat.
- Brush the skewers lightly with olive oil and season with salt and black pepper.
- Place the skewers on the preheated grill. Grill for about 2-3 minutes per side, or until the shrimp are pink and opaque, and the vegetables are slightly charred.
- During the last minute of grilling, brush the skewers generously with the spicy honey glaze. Remove the skewers from the grill and transfer them to a serving platter. Brush with any remaining glaze and serve immediately.
