INGREDIENTS
  

  • Olive oil
  • Pepper of choice (optional)
  • 1 cup Frozen hash browns
  • 3 oz Diced ham
  • 2 Eggs
  • Shredded cheese

INSTRUCTIONS
 

  • Preheat your oven to 450°F.
  • In a cast iron skillet, heat a little olive oil and sauté your peppers until soft and fragrant.
  • Add 1 cup of frozen hash browns and 3 oz of diced ham to the skillet. Season with salt and pepper, and stir everything together.
  • Create two small wells in the mixture and crack an egg into each.
  • Top with a little shredded cheese.
  • Transfer the skillet to the oven and bake at 450°F for about 6-7 minutes for runny yolks (over easy style).
  • Add an extra 2-3 minutes if you prefer your eggs more cooked.
