Cheesy Hashbrown Casserole

INGREDIENTS
  

  • 1 lb. Breakfast sausage, browned
  • 1 Small onion, diced
  • 26 ounces Frozen shredded potatoes (1 package) OR sliced fresh potatoes
  • 2 Bell pepper, diced
  • ¾ cup Shredded cheddar cheese
  • 32 ounces Egg whites
  • Salt and Pepper to taste

INSTRUCTIONS
 

  • Preheat your oven to 350℉
  • Spray a 9x13 casserole dish with non stick cooking spray
  • Brown your breakfast sausage, while it is cooking dice up your peppers and onions.
  • Combine sausage, peppers, onions, frozen shredded potatoes (or sliced potatoes), cheese and salt and pepper into casserole dish. Mix it up.
  • Pour your egg whites evenly over top of the entire dish.
  • Place in the oven uncovered for 60-65 min until eggs are completely cooked and set. Enjoy!

NOTES

You can use any breakfast sausage of choice, this recipe is calculated using pork sausage. If you have picky eaters, try cutting your peppers and onions into smaller pieces to hide them. Enjoy mixing in different vegetables to make this recipe your own. 
Top your finished product with some plain Greek yogurt and salsa for some added flavor!
