Blueberry Protein Muffins
INGREDIENTS
- 1 box Kodiak Cakes protein-packed muffin mix
- 1 pouch applesauce
- 2 eggs
- 8 oz Califia Farms almond milk coconut blend, toasted coconut
- 2 scoops Vanilla Protein Powder (Level-1)
- ⅓ cup plain fat free Greek yogurt
INSTRUCTIONS
- Preheat Over to 350
- Mix Level-1 and Kodiak Cake muffin mix.
- In a separate bowl mix together applesauce, 2 beaten eggs, almond milk, and Greek yogurt.
- Combine dry ingredients until blended.
- Bake for approximately 14 minutes.
- Check with a toothpick to make sure inside is cooked, add additional bake time if needed.

I made this into protien pound cake since my muffin pan didn’t fit in my Ninja air fryer / oven. My family LOVES IT!!!
