These enchiladas are pure comfort food loaded with seasoned beef, gooey cheese with just the right kick from green chiles. They are easy to make, super filling and always a hit with the family.

Beef & Cheese Enchiladas
INGREDIENTS
- 1 Onion, diced
- 2 lbs Ground beef
- 1 can Green chiles, diced
- 3 cups Mexican cheese, shredded
- ½ can Green enchilada sauce
- 8 Tortillas
INSTRUCTIONS
- Preheat oven to 350°F.
- In a skillet, sauté the diced onion until translucent.
- Add the ground beef and cook until browned.
- Strain out any excess fat from the cooked beef.
- Stir in the diced green chiles, 2 cups shredded cheese, and half the can of enchilada sauce. Mix well.
- Fill each tortilla with the beef mixture, roll them up, and place them seam-side down in a baking dish.
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil, sprinkle the remaining 1 cup shredded cheese on top, and bake until the cheese melts about 5 more minutes.
