Ground Beef & Veggie Skillet
INGREDIENTS
- 1 lb lean ground beef
- 1 zucchini
- 1 onion
- 2 TBSP taco seasoning
- ½-1 cup Colby Jack cheese
- ½ large sweet potato
INSTRUCTIONS
- In a large skillet brown ground beef. Drain grease and return to skillet.
- Chop sweet potato, zucchini and onion. Add to skillet with cooked ground beef and add taco seasoning. Add ½ cup water (more if needed), so it doesn't burn to pan.
- When veggies are cooked to your preference, top with shredded cheese.
- Serve when cheese is melted.
NOTES
This skillet is easily modified for even the pickiest eaters! You can sub the ground beef for chicken, turkey, sausage, etc. The veggies can also be swapped for your summer favorites or something convenient such as sweet potatoes, broccoli, squash, mushrooms etc. Add an egg for extra protein!
