Beef and Spinach Stuffed Portobellos
INGREDIENTS
- 4 Portobello mushrooms, large
- 1 lb Lean ground beef
- 2 cups Fresh baby spinach, chopped
- 1 Small onion, finely chopped
- 2 Garlic cloves, minced
- ½ cup Parmesan cheese, grated
- ¼ cup Breadcrumbs
- 1 tsp Dried thyme
- Salt & pepper
- Olive oil

INSTRUCTIONS
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- Remove the stems from the Portobello mushrooms and gently scrape out the gills using a spoon. Place the mushrooms on the prepared baking sheet, gill side up.
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 2-3 minutes.
- Add the lean ground beef to the skillet and cook until browned, breaking it up with a spatula as it cooks.
- Once the beef is cooked through, add the chopped baby spinach to the skillet. Cook for another 2-3 minutes until the spinach is wilted.
- Remove the skillet from the heat and stir in the grated Parmesan cheese, breadcrumbs, dried thyme, salt, and pepper. Mix until well combined.
- Spoon the beef and spinach mixture evenly into the cavity of each Portobello mushroom, pressing down gently to fill any gaps.
- Drizzle a little olive oil over the stuffed mushrooms for added flavor and moisture.
- Bake the stuffed Portobello mushrooms in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown and bubbly.
- Once done, remove the stuffed mushrooms from the oven and let them cool slightly before serving.
- Garnish the stuffed Portobello mushrooms with chopped fresh parsley and additional grated Parmesan cheese if desired.
