Baked Chicken Meatballs

A quick and easy meatball recipe. Great for on the go, as a snack or perfect protein addition to any meal!

INGREDIENTS
  

  • 1 lb ground chicken or turkey
  • 1 medium yellow onion
  • 1 tsp garlic (minced)
  • 1 Tbsp fresh parsley (finely chopped)
  • 1 egg (beaten)
  • 1 tsp Italian Seasoning
  • 1 cup Panko breadcrumbs
  • ½ cup parmesan cheese (freshly grated)

INSTRUCTIONS
 

  • Preheat oven to 400℉
  • Add all ingredients into large mixing bowl.
  • Use your hands or spatula to combine ingredients. DO NOT OVER WORK MEAT.
  • Using a small scoop or tablespoon, gently roll or shape meatballs.
  • Place meatballs ½ - 1 inch apart on a greased cooking sheet.
  • Generously spray top of meatballs with cooking spray .
  • Bake for 18 to 20 minutes or until meatballs are browned and cooked.

NOTES

Don’t overcook meatballs. Remove from oven as soon as you see meatballs are beginning to brown. You want meatballs to be juicy and soft. Over cooking or even leaving it for 2 to 3 minutes in oven once cooked will dry out the meatballs.
Allow meatballs to rest for 3 to 5 minutes. Serve immediately.
Baked chicken meatballs can be served with anything! We tend to keep these bare and make multiple recipes out of them for the week. Serve as is with a side sauce and a veggie. Spaghetti squash or zucchini noodles topped with spaghetti sauce and meatballs. Meatball sandwiches (buffalo, marinara, Asian, honey garlic, etc.). Brown rice and meatballs with a sauce of choice. On salads….so many different possibilities.
Use fresh grated onion in the recipe. Grated onion helps keep meatballs soft and juicy. Grating onion releases its juice which helps soak breadcrumbs and keep the meatballs from drying out.
Use panko breadcrumbs. Regular breadcrumbs will dry out the meatballs.
