  • 1 lb Chicken breast, boneless and skinless
  • 2 Sweet potato, cut in chunks
  • 2 Apples, cored and cut in chunks
  • 1 Red onion, cut in wedges
  • ΒΌ cup Olive oil
  • 2 Tbsp Maple syrup
  • 2 Tbsp Balsamic vinegar
  • 1 tsp Thyme
  • 1 tsp Cinnamon

INSTRUCTIONS
 

  • **Prepare the Marinade:** In a bowl, whisk together the olive oil, maple syrup, balsamic vinegar, dried thyme, ground cinnamon, salt, and pepper. This will be your marinade.
  • **Cut and Marinate:** Cut the chicken into bite-sized pieces. Place the chicken (or tofu), sweet potatoes, apples, and red onion in a large Ziploc bag or a bowl. Pour the marinade over the ingredients, seal the bag or cover the bowl, and refrigerate for at least 30 minutes, or ideally, a few hours to let the flavors meld.
  • **Skewer the Ingredients:** Preheat your grill to medium-high heat. Thread the marinated chicken, sweet potatoes, apples, and red onion. It is best to put each ingredient on their own individual skewer due to preferred cooking times. Chicken may take longer than apples, etc.
